Nothing beats xvidcap in terms of speed. While it might be a tad lacking in features like built-in text labeling, such things are easy to add using a movie editor.

This really fails, it dosen't work for me, and it always freezes. I was using Ubuntu 8.10 and xvidcap 1.1.6.
